Healthy and low calorie breakfast hash Ingredients:
1 pound red potatoes, peeled and cut into 1-inch cubes |
1 tablespoon olive oil |
1/2 medium onion, chopped finely |
1 red pepper, diced |
1/2 tsp. fresh thyme |
2 cloves garlic, minced |
1 cups cooked chicken, shredded |
1 cup fresh spinach, washed thoroughly |
Directions:
1. Place potatoes in a large pot and add enough water to cover. Bring to a boil, then reduce heat to medium-low and simmer until potatoes are almost tender, about 10 minutes. Drain. 2. Heat 1/2 Tbsp. olive oil in a medium skillet over medium-high heat. Add onion and cook, stirring until onion is softened. Add potatoes and cook until browned on all sides and cooked through, about 10 minutes. 3. In a separate large skillet, heat 1/2 Tbsp. olive oil over medium-low heat. Add peppers, thyme and garlic. Cook until soft, about 7-10 minutes. Season with salt and pepper to taste. Add cooked chicken, then spinach and cook just until spinach wilts. Stir in potato mixture until well combined. |
