Chicken Giblets and Livers in Sauce a La Chine |

A delightful dim sum appetizer from the Diana Liu cookbook. Ingredients:
3/4 lb chicken giblets |
3/4 lb chicken liver |
1/2 cup water |
3/4 cup soy sauce |
2 tablespoons sugar |
2 star anise (purchase in asian market) |
2 tablespoons sherry wine |
Directions:
1. Mix water, soy sauce, sugar, star aniseeds and sherry in a pot, cover; bring mixture to boil. 2. Add giblets and livers; bring to boil again; cover and simmer 10 minutes. 3. Remove livers from sauce; allow giblets to continue cooking for 1 1/2 hours. 4. Remove giblets from sauce. 5. Slice giblets and livers. 6. Serve cold. |
