I grew up in Texas eatting this meal but never tried to cook it for myself. This was the first recipe I tried, now it's the only chicken fried steak I'll eat. It's great served with mashed potatoes and bisquits. Ingredients:
1 2lb. round steak 1/2- 3/4 inches thick |
flour |
chicken fried steak batter |
2 tbp. sugar |
1/2 tsp. salt |
2 eggs |
1 tbs. baking powder |
1 cup milk |
gravy |
1 cup flour |
1/2 stick butter |
8 cups milk |
Directions:
1. Prepare the Chicken Fried Steak batter: Mix the first 4 ingredients with 1/2 the milk and stir until smooth. Add remainder of milk and mix well 2. Have the butcher tenderize the meat for you or thoroughly pound both sides with a tenderizing mallet 3. Trim off fat and cut 2 pieces into 5-6 inches in diameter 4. Flour each piece thoroughly and shake off excess 5. Dip meat in the Chicken Fried Steak batter, drain 6. flour again 7. fill a large pan half way with a good vegetable oil 325 degrees 8. Cook meat 7-10 mintues until golden brown 9. To Prepare the gravy: 10. Use the pan used for cooking the meat 11. gradually add flour and the butter. Slowly add milk, stirring until desired thickness is achived. Remove from heat 12. salt and pepper to taste |
