Quick-cook mix of vegetables, chicken and rice
Ingredients:
4 oz cooked chicken, diced
1 1/2 oz brown rice
1/2 red pepper, diced
3 oz peas
2 oz sweetcorn
1 spring onion, chopped
1 tsp olive oil
1 tsp soy sauce
1/2 tsp sesame oil
Directions:
1. Cook the brown rice according to the packet instructions
2. Heat the oil in a non-stick frying pan or wok
3. Add the vegetables and stir-fry until tender
4. Add the diced, cooked chicken
5. Return the cooked rice to the pan, stir through and turn down the heat
6. Add the soy sauce, stir through gently and serve immediately with a little sesame oil
