Chicken Fried Rice

This is my sons favorite. It is easy and you can substitute shrimp for chicken.
Ingredients:
1 medium onion, chopped
2 tablespoons butter
2 cups cooked rice
1 cup cooked chicken
4 tablespoons melted butter
3 -5 eggs, well beaten
1 tablespoon soy sauce
Directions:
1. In pan on top of stove, saute onion in butter, add rice.
2. Put chicken over rice.
3. Make a hole in the middle and add butter and eggs and stir until cooked.
4. Mix all ingredients together and sprinkle with soy sauce to taste.
