An all-time favorite. I hope you enjoy it as much as we do. Ingredients:
2 eggs |
4 boneless chicken breasts |
1t. fresh parsley; chopped |
2t. romano cheese |
lemon juice |
lemon slices |
2t. butter melted |
3t. cooking sherry |
olive oil |
Directions:
1. Cut breasts in half and pound until very thin. 2. Season with salt & pepper. 3. Combine eggs, lemon juice, cheese & parsley. 4. Dust chicken with flour & dip in egg mixture. 5. Saute in oil until golden brown on both sides. 6. Lay chicken in backing dish with lemon slices between layers. 7. Add butter & sherry. 8. Bake 325F for 25-35 minutes. 9. Reduce heat if mixture starts to bubble. |
