Chicken and pasta in a fiery tomato sauce. Chicken can be substituted with shrimp, pork, or sausage. Add more or less crushed red pepper to your liking. Linguini, or any other pasta may substitute the penne. Ingredients:
1 chicken breast, cubed |
2 tablespoons olive oil, extra virgin |
1 large onion, sliced |
3 cloves garlic or more to taste, minced |
1 cup wine, (white, red, burgundy work well) |
28 oz diced tomatos |
2 tablespoon basil, dry |
1/2 teaspoon oregano, dry |
1 black pepper to taste |
1 teaspoon crushed red pepper (or more to taste) |
1 pound penne pasta |
1 grated parmesan cheese to taste |
Directions:
1. Add 1 tablespoon of oil to skillet, cook chicken over med high heat remove from pan and set aside. 2. Cook pasta in seperate pot while cooking rest of ingredients. 3. Add 1 tablespoon oil to skillet, add onions and cook till translucent, about 5 mins., 4. Add tomatoes with their juices, wine, garlic, basil, red crushed pepper, black pepper and oregano. Simmer until the sauce thickens slightly, about 10 minutes. 5. Return chicken to skillet and cook another minute or two. 6. Serve over the pasta with some parmesan and enjoy. |
