Ingredients:
1 6 oz can orange juice concentrate, undiluted |
16-18 boneless/skinless chicken thighs |
dark raisins, orange slices, and parsley for garnish |
grated zest from 1 orange |
hot cooked rice |
1 large onion, chopped |
1/2 cup(s) orange marmalade |
salt and freshly ground pepper to taste |
1/2 cup(s) sliced almonds |
1/2 teaspoon(s) white pepper |
2 tablespoon(s) worcestershire sauce |
Directions:
1. Preheat oven to 375 degrees. 2. Rinse chicken and pat dry. Place in greased 9x12" baking dish. Season with salt and pepper and sprinkle with chopped onion. Combine orange concentrate, marmalade, Worcestershire sauce, zest, and white pepper and pour over chicken. Bake uncovered 30 min, basting frequently with sauce. Turn chicken and cook, basting frequently, 20-30 min or til chicken is opaque and no longer pink inside (165 degrees internally). Add almond slices last 10 min. To serve, spoon rice into serving dish and arrange chicken over rice. Spoon sauce over chicken and garnish with raisins, orange slices, and parsley. |
