Chicken Florentine with Rice |

Chicken with spinach, carrots, and rice- very tasty! Ingredients:
3/4 lb chicken tenders |
2 tbsp margarine |
1 1/4 cups chicken broth |
1/2 cup carrots, small sticks |
1 dash of nutmeg |
1 medium onion, chopped |
1 tbsp cornstarch |
10 oz chopped frozen spinach, thawed and drained |
1/2 tsp oregano |
1 1/2 cups instant brown rice |
2 tbsp grated parmesan cheese |
Directions:
1. Place carrots and margarine and onion in microwaveable dish. Cover and cook 2 minutes on High. 2. Stir cornstarch into chicken broth, add to dish with spinach, chicken, rice, oregano, and nutmeg. 3. Cover and cook 10 minutes or until chicken is fork tender. 4. Stir in cheese. |
