Chicken Fingers With Chipotle Gravy |

For those who love spice and gravy, you can experience both with this dish Ingredients:
for chicken |
oil for frying |
1 1/2 lb. chicken tenders |
1 cup flour |
salt and pepper |
2 tbls. oregano |
2 eggs |
1 1/2 cups panko bread crumbs |
for gravy |
1 tbls olive oil |
1 tbls butter |
1 shallot, minced |
2 tbls flour |
1 cup milk |
2/3 cup chicken broth |
1 to 2 tablespoon pureed chipotles in adobo |
1/2 tbls salt |
2 tbls thyme, chopped |
pepper to taste |
1/4 cup crema mexicana (can substitute creme fraiche but it's not as sweet) |
Directions:
1. For chicken 2. Preheat oven to 200 3. Heat oil to 350 in deep skillet 4. Cut chicken into desired size pieces 5. Set up dipping station by putting flour into a shallow dish 6. Beat eggs in another shallow dish 7. Mix bread crumbs, salt and pepper, and oregano into another shallow dish 8. Dip chicken in flour, then egg, and lastly breadcrumbs 9. Fry in batches until done(about 5 minutes) 10. Drain on paper towels 11. Place on baking sheet and keep warm in oven 12. For gravy 13. Heat olive oil and butter in a 2-quart saucepan 14. Saute shallot until tender 15. Stir in flour and cook over medium-low heat for 2 minutes. 16. Whisk in the milk and broth 17. Bring to simmer 18. Add chipotle, salt, thyme and pepper 19. Simmer on low for 10 minutes 20. Gravy should coat back of spoon 21. Whisk in crema and cook for a minute or 2 longer 22. Remove from heat 23. *This sauce may be prepared hours in advance and reheated before serving. |
