Put your feet up to watch that movie & snack on these great chicken fingers but make lots or you'll be back in the kitchen to make more Ingredients:
salsa |
1 can (20 oz) crushed pineapple in juice |
1/2 medium red sweet pepper - cored, seeded & chopped |
1 small red onion - chopped |
3 tblspn cilantro or parsley - chopped - i prefer parsley |
1 large jalapeno -- trimmed, seeded & chopped |
1 tblspn lime juice |
1/4 tsp salt |
1/4 tsp cumin |
chicken |
1/2 cup all-purpose flour |
2 eggs |
1/4 tsp cayenne pepper |
1/4 tsp ground nutmeg |
1/2 cup cracker meal - crackers crushed very fine |
1 1/2 lbs boneless chicken - cut into strips |
1/2 tsp salt |
1/4 tsp black pepper |
4 tblspn oil |
Directions:
1. SALSA:- 2. Make ahead so flavors can combine 3. In a medium sized bowl, stir all ingredients together. 4. Cover & refrigerate until ready to serve 5. CHICKEN:- 6. Lightly beat eggs, cayenne pepper & nutmeg in a shallow bowl 7. Mix flour, salt & pepper together on a large plate 8. Spread cracker meal on another plate 9. Dip chicken pieces in flour mixture 10. Dip in egg mixture & then in cracker meal to coat 11. Heat 2 Tblspn of the oil in a large skillet over medium/high heat 12. Add 1/2 the chicken & cook until done, turning half way through (about 5 mins) 13. Remove & keep warm. Repeat with remaining oil & chicken 14. Serve with the salsa 15. French Fries go well with these fingers for a full meal |
