Delicious Fajitas. Restaurant quality flavor. It is the mix of peppers and fresh ingredients that makes them so good. Serve with salsa, sour cream, guacamole, rice and beans. I'll post a guacamole recipe soon. If you like things with a lot of garlic, this should be enough for you. If you don't, cut back on the garlic! Sometimes I add fresh cilantro and lime juice. Enjoy! Ingredients:
5 onions, sliced |
4 jalapeno peppers, diced |
4 hot banana peppers, seeded and sliced |
1 green pepper, sliced |
1 red bell pepper, sliced |
1 yellow bell pepper, sliced |
6 tomatoes, sliced |
3 lbs boneless skinless chicken breasts, sliced lengthwise |
8 garlic cloves, pressed |
2 tablespoons chili powder |
1/2 teaspoon cumin |
1 teaspoon salt, divided |
3 tablespoons olive oil |
Directions:
1. Put 1 tablespoon olive oil in large cast iron skillet. Put onions, peppers, tomatoes, in skillet and sauté til tender. Season with 1/2 teaspoon salt. Remove from skillet. 2. Put 2 tablespoons olive oil in skillet and sauté chicken with 1 bulb garlic,1/2 teaspoon salt, chili powder, and cumin until it is tender. Add some water if it starts to stick. 3. When done, combine with vegetables and adjust seasonings. |
