A simple, one-dish, low-fat take on fajitas. Ingredients:
1 1/2 cups brown rice |
2 cups water |
1 cup fresh salsa |
1/2 cup chicken broth |
1 teaspoon sriracha |
1 tablespoon lemon juice |
1 1/2 teaspoons ground cumin, divided |
1 1/2 teaspoon garlic powder, divided |
1 cup black beans, no salt added |
2 cups cooked boneless skinless chicken breast, diced |
1 teaspoon canola oil |
1 large white onion, diced |
1 cup green pepper, diced |
8 oz frozen corn |
1 tablespoon brown sugar |
Directions:
1. Pour rice, water, broth, salsa, lemon juice, and 1t. each garlic and cumin into a 3 quart microwaveable dish. Microwave on high for 40 minutes or until rice is done stirring occasionally. 2. Meanwhile, heat oil in a medium frying pan. When oil is hot, add onions and cook until transluscent. Reduce heat to low. Add corn, peppers, chicken, and beans, sugar and remaining spices. Cook for 5 minutes. Mix into cooked rice mixture. Serve with sour cream, guacamole, and cheese if desired. |
