Makes 8 enchiladas. 1 enchilada per serving. Incomplete ingeredient is green taco sauce which is zero calories per 1 tablespoon. Ingredients:
9 oz boneless skinless chicken breasts |
7 ounces fat free refried beans |
14 ounce enchilada sauce |
4 tablespoons taco sauce, green |
8 corn tortillas |
1 small onion, chopped |
1 1/4 oz taco seasoning |
1 jalapeno pepper, diced slices from jar |
1/4 ounces canned green chiles |
1 1/2 cups low-fat cheese |
Directions:
1. Boil Chicken. Dice. 2. Mix together diced chicken, refried beans, taco seasoning, onion, 1/2 cup cheese. Divide mixture evenly into 8 corn tortillas (6 inch) and roll. 3. Place seam side down in baking pan. 4. Pour green taco sauce onto each enchilada, sprinkle with remaining cheese. 5. Pour can of enchilada sauce over top, cover with foil and bake for 30 minutes at 350 degrees. 6. Remove foil and bake for an additional 15 minutes. 7.
