Ingredients:
500 g chicken breast, skin removed, chopped in strips
4 tortillas, cut in half
410 g bell pepper, sliced in strips
130 g cheese, grated
180 g tomato paste
250 ml water, warm
210 g onion, chopped
2 tbsp fajita seasoning
1/2 tbsp olive oil
Directions:
1. Mix the warm water, tomato paste and faita seasoning together.
2. Heat the oil, cook the onion, peppers and chicken.
3. Add half of the water/tomato mixture.
4. Spoon the chicken and sauce mixture into the centre of the tortillas. Roll up and place in a lightly greased baking tray.
5. Spoon the remainder of the sauce over the top - sprinkle with the grated cheese.
6. Cook in the oven at 190C/350F until the cheese is melted and the tortillas have cripsed.
7. Serve with salad.
