I got this recipe, surprisingily enough from Pillsbury. It is absoluletly heavenly and great for a lunch or brunch Ingredients:
1 refrigerated pie crust, dough |
4 eggs |
1 cup half-and-half |
1 (12 1/2 ounce) can light chicken breasts |
1 1/2 cups tortilla chips |
2 cups shredded monterey jack cheese |
1 cup shredded cheddar cheese |
1 cup salsa |
1 (4 ounce) can green chilies |
1/2 teaspoon nu salt salt substitute |
Directions:
1. Heat oven to 350 degrees. 2. Place the Pie crust in a glass pie pan. 3. In a medium bowl, whisk eggs until well blended then beat in half and half. 4. Stir in Chicken, chips, Cheeses, salsa, green chiliesand salt. 5. Pour into pie crust filled plate. 6. Bake 65 minutes or until Crust is a light golden brown and a knife inserted into pie comes out clean. 7. lET STAND 10 MINUTES BEFORE cutting. 8. Garnish with Sour cream, and /or Guacamole. |
