Chicken Enchilada Casserole |

Given to me by my mother-in-law. People always enjoy it but it isn't health food! Ingredients:
1 (10 1/2 ounce) can cream of mushroom soup |
1 (10 ounce) can enchilada sauce |
1/8 cup chopped olive |
1 (13 ounce) bag doritos |
3 shredded chicken breasts |
2 cups shredded monterey jack and cheddar cheese blend |
1 cup chicken broth |
Directions:
1. Boil chicken. 2. Shred chicken using two forks. 3. In a 9x13 pan layer doritos, chicken, & cheese. Do this twice. Finally, sprinkle Doritos on top. 4. In a separate bowl, mix soup, broth, enchilada sauce, & Olives. Pour over casserole. 5. Sprinkle remaining cheese on top. 6. Bake at 350 until crisp, bubbly, and cheese is melted (Approx. 15 minutes). |
