I had this at a work related potluck. It's super easy. The lady who gave me the recipe is named Tanya R. Kids love it, men love it... Not Diet food! Ingredients:
4-6 boneless chicken breasts, cooked, shredded |
1 can cream of mushroom soup |
1 can cream of chicken soup |
1 can of rotel (tomatoes w/green chilis) |
1 1/2 lbs velveeta, cubed |
1 bag doritos, divided |
Directions:
1. Preheat oven to 350F. 2. Combine soups, rotel, and velveeta in a saucepan. Melt together. 3. Layer casserole dish with Doritos 1/3 bag of doritos, then add 1/2 the chicken, top with 1/2 the soup mixture. Repeat. 4. Top with rest of the Doritos (crushed up a bit). 5. Bake at 350 for 30-45 minutes or until lightly browned. 6. *Pre-cook chicken in a crockpot on high for 3 hours or low for 5-6. Chicken shredds real easy with two forks when cooked this way. ~OR~ boil chicken, drain, and shred. 7. Alterations: add diced onions, add jalepenos, add diced bell peppers. Caution addition of vegitables may lower kid/man likability quotiant of this recipe ;) |
