Lots of onions make this chicken curry extra tasty! Ingredients:
4 large onions, peeled and finely chopped |
4 garlic cloves, minced |
4 boneless skinless chicken breasts, cut into bite sized pieces |
2 ounces cilantro, chopped |
cooking spray |
2 tablespoons curry powder |
1 tablespoon garam masala |
2 teaspoons ground cinnamon |
2 teaspoons ground cumin |
1 pinch salt and pepper |
1 3/4 cups chicken broth |
14 ounces chopped tomatoes |
Directions:
1. Spray a large frying pan with cooking spray. 2. Cook the spices over a low heat for about 30 seconds. Add the onions and saute for 3-4 minutes. 3. Add the garlic and chicken to the pan and season well with salt and pepper. 4. Add the broth and chopped tomatoes and bring to the boil. Reduce the heat to medium-low and cook for 30 minutes or until the chicken is cooked through, stirring occasionally. 5. Serve with your choice of accompaniments. |
