The tangy tast of lemon juice and dijon mustard combine so well in this recipe. This is a great way to dress up chicken breasts. Ingredients:
2 chicken breast, boneless, skinless |
1/2 teaspoon salt |
1/2 teaspoon pepper |
2 teaspoons olive oil |
2 teaspoons butter |
1 tablespoon lemon juice |
1 tablespoon minced fresh parsley |
2 teaspoons dijon mustard |
1/4 cup low sodium chicken broth |
3 tablespoons chopped green onions |
Directions:
1. 1. Flatten chicken breasts to 1/4 inch thickness, sprinkle both sides with salt and pepper. In a large non stick skillet, brown chicken in oil and butter for 3-5 minutes on each side or until juices run clear. Remove and keep warm. 2. 2. In the same skillet, wish lemon juice, parsley and mustard until blended. Whisk in broth and green onions, heat through. Serve over chicken. |
