Chicken Cutlets with almond butter saunce |

Ingredients:
4 piece(s) boneless skinless chicken breast halves salt and black pepper |
2 tablespoon(s) all purpose flour |
1 tablespoon(s) vegetable oil |
1/4 cup(s) slivered almonds |
1/2 cup(s) dry white wine or chicken broth |
4 tablespoon(s) unsalted butter sliced |
1/4 cup(s) chopped scallions |
Directions:
1. Pound chicken to 1/2 inch thick then season with salt and pepper. Place in flour and dredge both sides. 2. Heat oil in a saute pan over medium high. Arrange cutlets in pan and saute until browned on each side, about 5-7 minutes total. Remove cutlets and keep warm. 3. Add almonds to pan and saute until roasted, about 3 minutes. 4. Deglaze pan with wine, scaping until wine thickens, 3 minutes. 5. Off heat stir in butter until melted and sauce thickens, add scallions to sauce. |
