Since moving to South Africa my kids have taken a liking to meat pies, so I have been experimenting with my own ideas. We all love this one! Ingredients:
2 pie crusts, cut into 1/4 's |
2 tablespoons oil |
2 lbs ground chicken |
2 teaspoons minced garlic |
2 teaspoons grated fresh ginger |
2 teaspoons salt |
1 1/2 teaspoons turmeric |
1/2 teaspoon coriander |
1 1/2 teaspoons cumin |
1 diced onion |
14 1/2 ounces chopped tomatoes |
Directions:
1. Saute onions in oil until tender. Add garlic and ginger and saute 30 sec. 2. Add spices and stir together. Add tomatoes and 1/2 c water. Stir. 3. Add chicken and cook through. 4. Done when the water is cooked out. 5. Put 2 T of meat on ea. piece of pie crust. fold over and seal. 6. Bake at 400 for 10-12 minute. |
