Classic low fat chicken curry dish
Ingredients:
500 g chicken breast
1 onion
400 g canned tomatoes
300 ml chicken stock
2 tsp grated ginger
2 tsp garlic (crushed)
1 tsp cumin
1 tsp ground coriander
1/2 tsp cardamom seeds (crushed)
1/4 tsp ground cloves
1 tsp ground cinnamon
1 tbsp curry powder
1 tsp paprika
1/4 tsp turmeric
Directions:
1. fry onion until medium brown in fry light oil
2. add all spices and stir for 2-3mins
3. add chicken and cook until sealed
4. add tomatoes and stock and cook for 45mins until sauce has reduced and thickened.
