Chicken Cucumber Tacos With a Sour Cream Tomato Sauce |

I invented it myself. Enjoy (: A recipe from my cookbook I'm making in my independent studies class. Ingredients:
8 flour tortillas |
1 lb boneless skinless chicken breast |
3 tomatoes |
1 1/2 cups sour cream |
1 cucumber |
1 lemon |
1 1/2 tablespoons coriander |
1 teaspoon red pepper flakes |
1 1/2 tablespoons cayenne |
vegetable oil |
salt and pepper |
Directions:
1. Begin by putting a tbs of oil into a medium sized skillet on medium high heat and another large pan with 1/4 inch of oil on the bottom on medium high heat. 2. Once hot begin putting the tortillas in the large skillet one at a time until slightly crispy. After one is done, repeat until all are finished. and set on a plate with paper towels. 3. Cut up chicken breast into one inch pieces and put in medium skillet with 1 tbs of cayenne and cook until tender. About 10 minutes, give or take. 4. Cut off both ends of the cumcumber and grate it. 5. Sauce: In a coffee or spice grinder, grind together the coriander, red pepper flakes and 1/2 tps of cayenne till a fine powder. 6. In a food proccessor combine sour cream, juice of 1 lemon, the tomatoes and the powder made above. 7. Now, BUILD YOUR TACO! |
