These fried croquette balls take a little more time to fix but they are well worth the extra effort and time. Ingredients:
16 (18 ounce) cans cooked chicken, drained |
1 cup onion, finely chopped |
3 tablespoons butter |
1/4 cup flour |
1/2 cup chicken broth |
1/3 cup milk |
1 tablespoon dried parsley |
1 teaspoon lemon juice |
1/4 teaspoon salt |
1/4 teaspoon pepper |
1/8 teaspoon paprika |
1/8 teaspoon nutmeg |
1 cup fine dry breadcrumb |
2 eggs, lightly beaten |
2 tablespoons water |
Directions:
1. Combine chicken and onion, set aside. 2. In a saucepan, melt butter, add flour and blend until smooth. 3. Add chicken broth and milk. 4. Cook until thick. 5. Remove from heat. 6. Stir in parsley, lemon juice, salt, pepper, nutmeg and paprika. 7. Add chicken mixture and mix well. 8. Chill at least 1 hour. 9. Preheat oil to 340°F. 10. Roll chicken mixture into 1-1 1/2 inch balls. 11. Mix egg and water. 12. Dip each ball into egg mixture and roll in bread crumbs. 13. Place into oil. 14. Cook 2-3 minutes or until done. |
