Chicken Corn Fritters With Green Chili Sauce |

Great appetizer. Ingredients:
1-15 oz. can corn, drained |
1 cup cooked chicken, finely chopped |
1 egg, lightly beaten |
1/2 cup milk |
2 tbls. butter, melted |
salt and pepper to taste |
1-3/4 cups flour |
1 tsp. baking powder |
oil to fry |
green chili sauce |
1/3 cup butter |
1/4 cup flour |
1/4 tsp. salt |
1/8 tsp. pepper |
1/8 tsp. garlic powder |
1/8 tsp. cumin |
1-4 oz. can green chilies |
1 cup milk |
cheddar cheese to garnish |
Directions:
1. Fritters 2. Bring oil to 375 temp. in deep fryer or skillet 3. But corn in mixing bowl and lightly crush with potato masher 4. Stir in chicken, egg, milk salt and pepper. 5. In another mixing bowl, mix flour and baking powder together 6. Stir into corn mixture until just combined 7. Drop batter by 1/4 cupfuls into oil 8. Fry 3 minutes on each side 9. Drain on paper towels 10. Green Chili Sauce 11. Melt butter in saucepan over med-low heat 12. Stir in flour and spices until smooth 13. Add chilies 14. Add milk gradually, while stirring 15. Bring to boil and cook until thickened, constantly stirring 16. Sprinkle cheese over fritters and serve with sauce on side |
