This is a delicious easy corn chowder recipe. It is filling creamy comfort food.. I like to serve it with warmed french bread Ingredients:
6 slices bacon |
1/2 c onions, chopped |
2 c diced peeled yukon gold potatoes |
1 small finely minced red pepper |
3 large ears of fresh corn, kernels removed from cobs and cobs set aside |
1 c water |
1 can chicken broth |
1 c cooked cubed chicken breast |
1 16 oz can cream style corn |
1/2 c half and half |
1/2 tsp cumin |
1tsp sugar |
1 tsp seasoning salt (janes crazy mixed up salt) |
1/4 tsp pepper |
Directions:
1. Break corn cobs into smaller pieces and put in a 3 qt dutch oven with water and chicken broth. 2. Bring to a boil, cover and simmer for 45 minutes 3. Drain reserving liquid 4. In a skillet brown bacon until crisp, remove and reserve 5. Add onions, red pepper and potatoes to drippings and saute for 5 minutes then drain well 6. Return liquid to dutch oven, add fresh corn, cream style corn , chicken, cumin, sugar, seasoning salt and pepper 7. Bring to a boil cover and simmer for 25 minutes 8. Remove cover add half and half and bacon crumbled, simmer 5 minutes and serve |
