Easy Chicken Cordon Bleu with a restaurant taste.
Ingredients:
6 boneless chicken breasts
6 slices swiss cheese
6 slices ham
3 tablespoons flour
1 teaspoon paprika
8 tablespoons butter, divided
8 ounces sliced mushrooms
1/2 cup dry white wine
1 teaspoon chicken bouillon
1 tablespoon cornstarch
1 cup half and half
Directions:
1. Heat 2 tablespoons butter in skillet and add sliced mushrooms and cook until tender. Remove to bowl and set aside.
2. Pound chicken breasts if too thick
3. place a cheese and ham slice on each breast within 1/2 inch of edge
4. Fold edges of chicken over filling and secure with toothpicks
5. Mix flour and paprika and coat chicken
6. Heat 6 tablespoons butter in skillet and cook chicken until browned on all sides.
7. Add wine and bouillon
8. Reduce heat to low, cover and simmer 25 minutes
9. Remove tooth picks and transfer to warm platter
10. Blend cornstarch with half and half and whisk slowly into skillet until blended then add cooked mushrooms; cook until thickened then pour over warmed chicken.
