Unbreaded Chicken Breasts stuffed with ham and swiss cheese and covered in a Cream of Mushroom sauce. Ingredients:
16 oz boneless skinless chicken breasts (about 4) |
4 oz sliced swiss cheese (about 4 slices) |
170 g oscar mayer smoked deli ham (4 slices) |
1 1/4 cups healthy request cream of mushroom soup (1 can) |
3/4 cup skim milk |
1 cup sliced mushrooms |
1 tsp black pepper |
Directions:
1. Preheat oven to 375d. 2. Spray a large baking dish with nonstick cooking spray. 3. Place each chicken breast between 2 sheets of plastic wrap and pound with a meat mallet until chicken is about 1/2 -3/4 thick. 4. Place 2 slices of ham and 1 slice of swiss cheese on each chicken breast and roll up. 5. Secure with a toothpick. 6. Bake for 40-50 minutes or until chicken is cooked through. 7. As chicken finishes cooking, mix soup, black pepper, and milk in a saucepan. 8. Stir in Mushroom slices 9. Mix and heat thoroughly - stirring occassionally. 10. Serve sauce over chicken. |
