Chicken breasts with smoked ham and Swiss cheese. 8 points Ingredients:
1 lb boneless skinless chicken breast |
4 slices smoked ham |
4 slices swiss cheese |
1/4 cup all-purpose flour |
1/4 cup honey mustard |
1/4 cup italian style breadcrumbs |
Directions:
1. Preheat oven to 400°F. 2. Coat baking sheet with olive oil cooking spray. 3. Place chicken breasts between 2 pieces of plastic wrap and pound to 1/4 thickness; remove plastic wrap. Arrange 1 slice of ham and 1 slice of Swiss cheese on each breast. 4. Starting from the shorter end of chicken, roll breast into a tight pinwheel. Tuck ends inches Secure with toothpicks. 5. Place flour, honey mustard, and breadcrumbs in 3 separate shallow bowls. Add chicken to flour, turn to coat. Add chicken to mustard; turn to coat. Add chicken to breadcrumbs; turn to coat. 6.
