A delectable combination of savory ham and mellow Swiss cheese stuffed in a lightly breaded, boneless chicken breast. Ingredients:
6 large boneless skinless chicken breasts |
12 slices swiss cheese |
6 slices ham |
2 cups italian seasoned breadcrumbs |
1/2 cup flour |
4 eggs |
2 tablespoons milk |
cooking oil (for frying) |
Directions:
1. Combine eggs and milk in a small bowl. 2. Combine flour and breadcrumbs in a larger bowl. 3. Pound the chicken breasts to approximately 1/4 inch between waxed paper. 4. Place 1 slice swiss cheese on chicken breast, followed by 1 slice ham, then another slice of cheese. 5. Tuck in sides of chicken and roll chicken in a tight roll. Secure with toothpicks. 6. Dip chicken into egg mixture, place into breadcrumb mixture and coat thoroughly. 7. Repeat for all chicken breasts, then place in refrigerator for a minimum of 30 minutes (can be refrigerated overnight). 8. Preheat Oven to 350 degrees. 9. Heat oil in frying pan and saute until golden brown. 10. Place the chicken on a baking sheet, cover with foil and bake for 35 - 40 minutes. |
