I made this salad one night when we had tons of veggies to use up. It makes a great meal and provides enough leftovers for lunch!
Ingredients:
2 boneless skinless chicken breasts, cooked and cubed
3 lg eggs, hard boiled and sliced
6 slices of bacon, cooked and diced
1 head of iceburg lettuce, chopped
2 beefsteak tomatoes, diced
2 cucumbers, sliced
3 bell peppers, green, yellow, & red, chopped up
1 lg can sliced black olives
Directions:
1. Combine all ingredients in a large bowl, toss and serve with the dressing of your choice.
2. I used Bountifuls Hearty Italian. He used Ranch. It was yummy either way!!
