2 tbsp virgin oil |
1 cup sliced onion |
1 1/2 cups sliced celery |
1 cup sliced mushrooms |
2 cups chicken stock |
3 tbsp soy sauce |
3 cups cooked chicken, cut in strips |
1 1/2 tbsp cornstarch |
1/2 cup minced scallions |
chow mein noodles |
boiled white rice |
Directions:
1. Heat oil in a saucepan; cook the onions, celery, & mushrooms in it for 3 min. 2. Add 1 cup of chicken stock, soy sauce, & chicken. 3. Cook 5 min. 4. Mix the cornstarch with the remaining stock & stir in the chicken mixture until thickened. 5. Add the scallions. 6. Arrange mixture over the noodles, which have been crisped in the oven. 7. Serve with rice as a side dish. |
