Ingredients:
1 lb boneless chicken
1/2 cup unsalted peanuts
2 tablespoons vegetable oil
2 celery ribs, thickly sliced
1 1/2 cups bean sprouts
4 green onions, coarsely chopped
1 (455 ml) jar sweet and sour sauce
2 teaspoons soy sauce
cooked rice
Directions:
1. Cut chicken in 1-inch cubes.
2. In wok or skillet, toast peanuts over high heat, remove.
3. Add oil. Stir fry chicken until no longer pink, 2-3 minutes.
4. Add celery, sprouts, and onions nad fry for 3 minutes.
5. Add sweet and sour sauce and soy sauce. Heat through for 1 minute.
6. Serve on rice sprinkled with peanuts.
