Chicken & Chorizos W/ Rice Cuban Style |

Note that recipe calls for 1/2 cup tomatoes but I used a full can; cut back broth amount if necessary. Ingredients:
12 oz (4) chicken breasts, boneless, skinless 8 oz chorizo sausage 2 cups raw basmati rice 1 red sweet pepper 1 onion 5 cloves garlic |
Directions:
1. Cut up chicken and chorizos in small pieces. Brown in small amount of oil. Set aside. 2. Brown rice for a few minutes with pepper, onions and garlic. Add 2 1/2 cups of broth or hot water. Bring to a boil. Add chicken pieces, canned tomatoes and saffron. Let cook with a small flame (kind of steam it) for about 40 minutes. Before it's done, add the chorizos. 3. Saffron should be ground and bit of water added to it before adding it to the rice. |
