A healthy version of chicken chimichangas-baked instead of fried, but still crispy and delicious! Ingredients:
9 flour tortillas |
4 servings reduced fat cheese (this is 1 cup) |
2 1/2 cups cooked chicken, diced or shredded |
2/3 cup salsa |
1/2 cup green onion, chopped |
1 tsp cumin |
1/2 tsp oregano leaves |
1/2 tsp salt |
Directions:
1. Simmer chicken and seasonings for 5min. 2. For each chimichanga, put 1/3 cup chicken mixture adn 2 Tbsp cheese. Fold in ends and roll. 3. Place seem-side down on cookie sheet. Spray with Pam. 4. Bake for 13 min at 475 F (or until crisp and golden brown.) |
