These are really good, easy and quick. Baked instead of fried they are as much like burritos as they are Chimichangas. I use leftover smoked chicken or the roasted chicken from the deli is really easy. From Sam the Cooking guy, we like alot of his dishes. Ingredients:
4 cups cooked chicken, shredded |
1/2 white onion, chopped |
1-4oz can diced green chilies |
1 cup picante sauce |
1 cup enchilada sauce |
shredded cheddar cheese |
sour cream |
cilantro |
4 flour tortillas, burrito size |
Directions:
1. Heat oven to 400 2. Saute onions in a little oil in a skillet 3. When softened, add chicken, picante sauce and green chiles 4. In a separate pan, heat the enchilada sauce 5. Heat tortillas to make them pliable 6. Spoon 1/4 mixture on each tortilla and roll up restaurant style 7. Place on a greased pan and rub top of burrito lightly with oil 8. Bake until golden, about 10-15 minutes 9. Spoon warm enchilada sauce on a plate, lay chimichanga on top, add a spoonful of sour cream and sprinkle with cheese and cilantro 10. Enjoy! |
