Home-made Chicken Salsa Chili (Tomato Sauce & Beer based) Ingredients:
1 tbsp. canola oil |
1 medium onion, diced |
3 cloves garlic |
4 cups great northern beans |
2 cups frozen corn |
1 cup black beans |
14 ounce chicken breasts |
1 can beer |
30 ounce tomato sauce |
30 ounce diced tomatoes |
1/2 tsp. salt |
1 tsp. pepper |
Directions:
1. Sautee Onion and Garlic in Canola Oil in a large soup pot. 2. Sautee Thawed Chicken breasts in a separate pan with fat-free italian dressing. Add to the soup pot when it finishes (any time... no need to hold up the recipe waiting for the chicken to cook.) 3. When onion is soft, add frozen corn and beans, drained, to the soup pot. Stir to combine. 4. Add diced tomatoes with juices, tomato sauce, and beer. Stir well. 5. Add seasonings (Chili, Cayenne, Salt & Pepper) (Or you can just add a bagged taco seasoning). 6. Simmer for 15 minutes to combine flavors. (It is even better the next day.) 7. Serve with sides of Sour Cream, Jack Cheese, and Taco Chips. YUM! |
