This so easy to make. And it's not as spicy as Red Meat Chili. It also brings sweet memories to mind, thinking of famiily times. It's our favorite winter get together food. I serve this with Salad & Corn Bread. If, I have time, Onion Rings. Ingredients:
4 chicken breasts (cooked and deboned,chopped) |
1 small onion (chopped) |
1 cup celery (chopped) |
20 ounces cream of chicken soup |
30 ounces great northern beans |
10 ounces rotel tomatoes (mild) |
1 teaspoon chili powder |
1/4 teaspoon cumin |
Directions:
1. Pre-Heat oven at 375%. 2. Season Chicken to your taste. { I use Poultry seasoning, Garlic & Onion salt.} Wrap chicken in foil and Cook in oven for 45 minutes. 3. While Chicken is cooking Chop, {Celery and Onion}. 4. Saute Celery and Onion in 1 TBlS Olive oil in Dutch Oven, just enough to brown. 5. Debone Chicken, and chop in to bite size bits. Place chicken in Dutch Oven. 6. Add Soup, Beans, Rotel, Chili, and Cumin to Dutch oven. 7. Bring just to boil and reduce heat to simmer. Allow to cook for 45 minutes. |
