Fast and easy, great with left over chicken Ingredients:
3 cups cubed, chicken |
1 (28 oz ) can las palmas green chile enchilada sauce , or what ever brand you have in your area |
1 (15 or 19 oz ) can black beans, drained and rinsed |
1 1/4 cup frozen corn |
1 cup chopped onions |
2 garlic cloves, minced |
1 tbs chopped fresh cilantro |
Directions:
1. Combine all ingredients in Dutch oven or large sauce pan; bring to a boil. 2. Reduce heat; simmer, uncovered, 30 to 40 minutes. 3. serve with warm corn tortillas or corn bread. |
