A yummy soup. Is great on cold winter nights.... Ingredients:
1 lb ground chicken |
1 cup onion, chopped |
2 teaspoons garlic, minced |
1 teaspoon ground cumin |
1/2 teaspoon dried oregano |
1/2 teaspoon salt |
1 cup salsa verde (bottled) |
2 teaspoons olive oil |
19 ounces chickpeas, drained |
cilantro |
scallion |
monterey jack cheese |
tortilla chips |
Directions:
1. Heat oil and cook meat, onions and garlic. 2. Add spices and chicken broth. 3. Cover and simmer for 5 minutes. 4. Stir in peans and salsa and heat through. 5. Serve with cilantro, scallions, cheese and chips. |
