Healthy comfort food, especially good in cold weather.
Ingredients:
1 t olive oil
1 green bell pepper, chopped
1 med onion, diced
3 cloves garlic, minced
3 - 4 chicken breasts, cooked, boned & cubed
2 15 oz cans diced tomatoes
2 15 oz cans pinto beans
1 c picante sauce
1 t chili powder
2 t cumin
1 1/2 cups whole grain rice, cooked
sharp cheddar cheese, grated
Directions:
1. Saute green pepper, onion & garlic in olive oil.
2. Add the chicken and other ingredients.
3. Simmer 15 minutes until flavors have blended.
4. Serve over rice. Top with grated cheese.
