Healthy comfort food, especially good in cold weather. Ingredients:
1 t olive oil |
1 green bell pepper, chopped |
1 med onion, diced |
3 cloves garlic, minced |
3 - 4 chicken breasts, cooked, boned & cubed |
2 15 oz cans diced tomatoes |
2 15 oz cans pinto beans |
1 c picante sauce |
1 t chili powder |
2 t cumin |
1 1/2 cups whole grain rice, cooked |
sharp cheddar cheese, grated |
Directions:
1. Saute green pepper, onion & garlic in olive oil. 2. Add the chicken and other ingredients. 3. Simmer 15 minutes until flavors have blended. 4. Serve over rice. Top with grated cheese. |
