Can be made ahead and served at room temperature; or warm in the oven as guests arrive. They freeze well and are easier to slice if partially frozen. Ingredients:
1 cup shredded cooked chicken |
1 cup shredded cheddar cheese |
4 ounces cream cheese, cut into small pieces |
1 (4 ounce) can diced green chilies, drained |
1/2 cup finely chopped green onion (include some tender green tops) |
1/2 cup finely chopped red bell pepper |
2 ounces chopped black olives |
4 flour tortillas (10-inch) |
Directions:
1. Preheat oven to 350°. 2. In a bowl, mix the chicken, cheeses, chiles, onions, bell pepper, and olives together; taste and add salt and pepper, if needed). 3. Spread mixture evenly on the tortillas, almost to the edge. 4. Roll up, wrap in plastic wrap, and refrigerate 1 hour or longer. 5. Cut the rolled tortillas into 3/4-inch slices and serve at room temperature or place on a baking sheet and bake about 6 minutes, or until warmed-serve immediately. |
