Chicken, Cauliflower and Potato Vindaloo |

curry Ingredients:
1 tbsp grapeseed oil |
404 g chicken breast, skinned and boned |
305 g onion, chopped |
466 g potato, chopped |
95 g tomatoe paste (or 110g tomatoes, diced) |
200 ml water |
257 g cauliflower, diced |
1 1/4 tbsp curry paste(vindaloo) |
Directions:
1. Fry the onions in the oil until soft, add potato and cauliflower. Mix tomato paste and water together, add to pan. 2. Add chicken and curry paste, and cover. Simmer until chicken is cooked and sauce has desired consistency. 3. Serve over pilau or basmati rice. |
