Recipe by Adela Hernandez Gonzmart. Ingredients:
2 1/2 lbs chicken pieces |
1/2 cup diced tomato |
1 onion, chopped |
1/2 cup spanish olive oil |
1 green pepper, chopped |
20 mushrooms, sliced |
3 garlic cloves, minced |
1 teaspoon salt |
3/4 cup tomato sauce |
1/2 cup roasted red pepper, strips |
chopped parsley |
cooked rice (to serve) |
Directions:
1. Heat oil in an ovenproof skillet, and brown chicken. 2. Add garlic, green pepper, onion, and saute until vegetables soften. 3. Add tomato sauce, tomatoes, mushrooms, salt and bring to a boil. 4. Cover pan and bake at 450F for 40-45 minutes. 5. Garnish with roasted peppers and parsley, and serve with rice. |
