This is a simple and tasty. Also this is a recipe that can be use by anyone. This recipe is intended for the Gastric Bypass individuals. Adapted from Victoria Bowen's Recipes for Gastric Bypass Patients. Photo is mine.
Ingredients:

3 pounds boneless, skinless chicken breast
2 cups chicken broth, fat-free
1/4 lbs. mushrooms
1 bay leaf
1 onion, sliced
2 carrots, sliced
1 cup celery, chopped
1 1/2 tsp. salt
1/2 tsp. pepper
2 1/2 tbs. parsley, chopped
1/2 tsp. thyme
1/4 tsp. marjoram
Directions:
1. Preheat oven at 350.
2. Place chicken in a 2 quart casserole dish. In a medium bowl mix all remaining ingredients. Pour over chicken. Bake, covered for 90 minutes or until chicken is tender.
