Chicken Cashew Lettuce Wraps |

From here: /2009/09/chicken-cashew-lettuce-wraps/ I have made these several times with great success. Always a pleaser. I make them gluten free, so I use a gluten-free soy sauce. Ingredients:
12 ounces boneless skinless chicken breasts |
1 1/2 tablespoons canola oil |
1 cup onion, diced |
2 garlic cloves, minced |
1 teaspoon soy sauce |
1/4 cup cashews, chopped |
2 tablespoons soy sauce |
1 tablespoon rice vinegar |
1 tablespoon brown sugar |
1/4 teaspoon ground red pepper |
1/4 teaspoon ground ginger |
1 teaspoon sesame oil |
8 leaves iceberg lettuce |
Directions:
1. Mix all stir fry sauce ingredients. Set aside. 2. Heat oil over medium high heat and add chicken. Brown chicken (4-5 minutes). 3. Remove chicken from pan and add onions, garlic, and 1 tsp soy sauce. Brown. 4. When onions are tender, return chicken to pan and add cashews. Stir fry for a minute or two to reheat chicken. 5. Add stir fry sauce and saute for a few more minutes. 6. Remove from heat and spoon into lettuce leaves to serve. |
