Chicken with zucchini, potatoes, carrots, onions, and seasonings. Family raved about this. Ingredients:
2 tablespoons oil |
2 large onions, sliced |
1 teaspoon ground ginger |
3 garlic cloves, minced |
3 large carrots, diced |
3 lbs skinless chicken pieces |
1/2 teaspoon ground cumin |
1/2 teaspoon salt |
1/2 teaspoon pepper |
1/4 teaspoon cinnamon |
2 tablespoons raisins |
1 (14 1/2 ounce) can chopped tomatoes |
3 small zucchini, sliced |
1 (15 ounce) can garbanzo beans, drained |
2 tablespoons chopped parsley |
Directions:
1. Saute onions, ginger, and garlic in oil in skillet. (Reserve oil), and transfer to a slow cooker. 2. Add carrots, and potatoes. 3. Brown chicken over medium heat in reserved oil, and transfer to slow cooker. 4. Mix gently with vegetables. 5. Combine seasonings in a seperate bowl, and sprinkle over chicken and vegetables. 6. Add`raisins, and tomatoes. 7. Cover, and cook on high for 4-6 hours. 8. Add sliced zucchini , beans, and parsley 30 minutes before serving. |
