This is a very pretty salad that's easy to throw together for brunch. Ingredients:
3 c. chicken breast, cubed, cooked |
1-2 tblsp. oil |
2 c. seedless green grapes, halved |
2 c. celery, finely chopped or minced, as you like |
1 1/2 c. miracle whip |
1/4 c. + 2 tblsp. milk |
2 tblsp. apricot preserves |
pinch of salt |
4 small cantaloupe |
apricot preserves, for garnish |
toasted almonds, for garnish |
Directions:
1. cube and cook the chicken breast..... 2. Combine all ingredients, except cantaloupe and garnish, thoroughly 3. Either halve or quarter the cantaloupe 4. If halving, scoop salad into the hollow of the melon, 5. if quartering, arrange on the plate with the serving of salad 6. garnish with a small scoop of preserves, sprinkle on a few almonds. |
