Chicken Caesar Tortellini With Toasted Almonds |

A nice summer salad using up its and bits from the fridge. Serve with a baguette and seasonal vegetables. Ingredients:
250 g cheese tortellini (fresh or frozen) |
1/2 cup caesar salad dressing (creamy, preferably homemade or ranch dressing) |
1/4 teaspoon black pepper, fresh |
1/4 cup fresh basil, chopped |
2 cups cooked chicken |
1/4 cup slivered almonds, toasted |
1/4 cup parmesan cheese, grated |
Directions:
1. Cook tortellini in salted water. Rinse tortellini under cold running water until cool; drain. 2. Stir dressing with black pepper and basil. Add tortellini - avoid breaking up the pasta. Salad can be covered and refrigerated for up to a day. 3. When ready to serve, gently fold in chicken and nuts. Sprinkle Parmesan over top. |
